Here are a few of our favorite easy meals.

Bear Creek makes great dried soups that with some extra ingredients make wonderful dinners for cold nights.

Potato soup: add some fresh onion and a whole potato then some meat like ham or clams. Serve with oyster crackers or pita.

Cheddar broccoli soup: add extra cheese and some carrots.

Their Chili Mix (I leave out tomato paste) is great with tortilla shells crumbled in.

Pick up several kinds of Pesto sauces in bags. They keep a long time and make great pasta with dried tortellini, parmesan, cheese, fresh garlic, and a can of chicken if you want meat with it.

Thai curry is a wonderful meal. Sauté an onion and red pepper, mix into the curry. Add a can of chicken if you desire.

We always make at least one Mexican meal while we're out. Our goal, if we're lucky, is to catch fish. If not, refried bean tostadas are a great second choice. If you've got a cooler, cook up marinated taco meat at home and freeze it. Take corn tortillas or tostado shells (taco shells don't travel well). Take a small can of salsa if you have room; if not, dried salsa mix can be added to sun-dried tomatos to make a hot, zesty salsa. Top with shredded cabbage.

Fried Rice: cook instant brown rice and add a fried rice seasonings packet and fry in sesame and canola oils with ham, mushroom, onions, fresh garlic, sun-dried tomato and peppers.

Quesadilla: flour tortillas pan fried with cheese and green chilies.

We always have fish fry ingredients along if we intend to fish. Butter and garlic if we expect to find clams, crabs or mussels. If you're lucky, sometime you can buy a fish off of a local fisherman.
